Sarah Boatwright, who goes by Boatwright due to the unfortunate abundance of Sarahs on the executive board, is a third year Plan II and Sustainability Studies double major with a minor in English. In her free time, Boatwright likes to frequent the Austin Green Belt and Barton Springs, read, or attend one of the many small band rock shows around Austin. She is from Houston, TX (h-town hold it down forever) and misses the incredible and diverse art scene in Houston every day. Besides Student Government, Boatwright is involved with the Campus Environmental Center at UT and has a passion for sustainability, she works as a student tutor for Environmental Science with the PLUS mentorship program, and works with a professor in the RTF department at UT to promote the Living Springs documentary series. She is very interested in Maya and Mesoamerican Culture, and would rather be researching in Antigua, Guatemala right now. Some of Boatwright’s favorite Austin restaurants are P.Terry’s, Cippolina, Elizabeth St. Cafe, Justine’s, and Wu Chow. A better question, she argues, would be to ask her about her favorite Houston restaurants because the Houston food scene is better than Austin’s.
